Turkish cuisine is continuation of Ottoman cuisine, which borrowed many elements from Middle Eastern, Central Asian, Balkan, Caucasian and Greek cuisines.  It varies across the country. The cooking of Istanbul and Aegean region inherits many elements of Ottoman court cuisine, with a lighter use of spices, koftes and vegetable stews, dolmas, eggplant and fish.
